From a somewhat unlikely source, Mike Tyson:

Everyone has a plan until they get punched in the face.

Eric Falkenstein calls it "inadvertently deep," which captures its essence perfectly. It seems to me that most of the famous quotes floating around are the exact opposite of that: trying very hard to appear clever, and failing miserably.
